Ingredients:
1 medium spaghetti squash
3 T butter
1 small onion, thinly sliced
1 t red pepper flakes
¼ t garlic powder
¾ c Greek yogurt
1 c shredded cheese, low fat
Salt and pepper to taste
Instructions:
Preheat oven to 3750 F, cut the spaghetti squash in half and remove the seeds. Place spaghetti squash in a dish with ½ inch of water ad microwave for 10-4 minutes, until fork tender. In a medium skillet over medium heat, add butter, onion, red pepper flakes, garlic powder, salt and pepper flakes and cook until the onions are brown. Using a fork, scrape out the inside of the spaghetti squash and transfer to a mixing bowl. Add sautéed onion, Greek yogurt and half the cheese to the squash. Mix well. Transfer to a baking dish sprayed with cooking spray and top with remaining cheese. Bake for 20-25 mins. Broil for the last 2-3 min until golden brown. Serve with any protein you like!
