INGREDIENTS

3 Tbsp olive oil
1 Spanish onion, chopped
3 garlic cloves
2 celery sticks, chopped
1 carrot, chopped
6 oz smoked ham, chopped
1 lbs lentils
12 ½ cup stock
1 bay leaf
4 fresh parsley sprigs
4 tomatoes, peeled ad chopped
1 ½ tsp sweet paprika
4 Tbsp sherry vinegar
Salt and pepper

INSTRUCTIONS:

Heat oil in pot. Add onion, garlic, celery, carrot and cook over a ow heat for 5-7 mins until soft

Add ham and cook 3 more mins stirring occasionally. Remove and set aside cooked ingredients

Add lentils, stock, bay leaf and parsley to pan. Increase heat to medium and bring to a boil. Reduce heat and simmer, stir occasionally for 30 mins

Add tomatoes and return vegetables and ham to pan. Stir well can simmer for 25-30 mins

Remove and discard bay leaf and parsley. Stir in paprika and vinegar, season to taste with salt and pepper. Heat through for 2-3 min and ladle into warmed soup bowls and serve immediately!
