Ingredients:

1 lb 93% lean ground beef
1 can low-sodium black beans, rinsed and strained
1 can diced tomatoes and green chilies, drained
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
3 T fiesta lime seasoning
Nonstick cooking spray
Optional and will add to nutrition content: 2% milk cheese, plain Greek yogurt, salsa, avocado slices

Instructions:

  1. Spray a muffin tin with nonstick cooking spray
  2. Preheat oven to 3500 F
  3. In a large bowl, mix ground beef, bell peppers, onions, diced tomatoes and green chilies and fiesta lime seasonings
  4. Gently fold in black beans (no smashing)
  5. Scoop mixture into muffin tins
  6. Bake for 20-30 mins, internal thermometer (1600 F)
  7. Top with any optional ingredients.
